Terroir: Baban Farm (Bois Senéseau/Bois Sénechaux) and La Crau Ouest
Soils: Clay-limestone, rounded pebbles.
Grape varieties: 80% Grenache, 10% Syrah, 10% Mourvèdre.
Vinification – Élevage
Traditional red winemaking. 100% destemming.
Long maceration periods. Strict temperature control.
Co-fermentation: Grenache-Syrah, followed by Grenache-Mourvèdre.
Indigenous yeasts only.
Punching down (*pigeage*) based on the vintage and tasting assessments.
Malolactic fermentation completed.
Aging in concrete and ceramic tanks.
No oak aging.
