Vines on the Gigondas plateau, in the Santa Duc area, surrounding the
Domaine du Terme winery.
Vineyard with an average age of 45 years.
Vinification – Élevage
Blend: 80% Grenache, 15% Syrah, 5% Mourvèdre.
Exclusively hand-harvested.
80% destemming; manual punch-down (*pigeage*).
Extended maceration: 30 days for Syrah, 22 days for Grenache and Mourvèdre.
Strict temperature control.
Aged exclusively in tanks for this reserve.
Bottled after 4 years of aging.
Unfiltered; fined only.
Dégustation
The Grenache-Syrah-Mourvèdre blend produces more complex wines.
They are not particularly fruit-forward in their youth but possess great complexity, making them well-suited for aging.
Ideal with meat in sauce, Provençal beef stew, or game.
Very enjoyable with aged Comté cheese.
