La vigne
Vines located in the commune of Sablet, in the “Les Chevallong” terroir.
Blend: 50% Viognier, 50% Roussanne.
Domaine du Terme is based in Gigondas; Rolland Gaudin purchased his Sablet property in 1971.
Rolland and his daughter Anne-Marie planted this Viognier plot in 1987.
In the south, a single-varietal Viognier tends to produce a wine that is too heavy and lacks finesse.
Here, however, the high-altitude location of the vines—and above all the blend with Roussanne—create a wonderfully balanced wine.
Vinification – Élevage
Hand-harvested.
Direct pressing.
Blending in the tank.
Use of dry ice to inert the tank and preserve aromas.
Fermentation at 18°C.
No malolactic fermentation.
No oak aging.
Bottling and sale in the spring following the harvest.
Dégustation
A small-batch wine from the estate, perfect for accompanying aperitifs or relaxing moments over a glass. Best enjoyed young.
